Research summary
This study aims to investigate the relationship between dietary ergothioneine intake, diet quality, and pre-eclampsia in pregnant women from the Liverpool region. Using a cross-sectional design, it will include 100 participants (50 with pre-eclampsia, 50 without) who will complete an online survey to provide demographic and clinical data, along with dietary assessments using a validated Food Frequency Questionnaire (FFQ) and MyFood24 24-hour dietary recall tool. The FFQ will focus on diet quality and ergothioneine-rich foods, while MyFood24 will provide detailed nutrient profiles from foods consumed in the last 24 hours. Comparisons will be made between the two groups (with and without pre-eclampsia) to assess ergothioneine intakes and diet quality scores, with feedback collected on the usability of the dietary tools. This study will provide insights into diet quality and ergothioneine intakes in pregnant women in Liverpool; in addition it will provide information on the ease of usability of dietary assessment tools by this population.
